I totally forgot to take photos of this dinner - I made it in a hurry after I came home late from a long meeting the other day, and it smelt so good that we both wolfed it down before I even thought to take a picture. But take my word for it - comes delicious. And people who actually know things about making curry should made some adaptations to the spices - I just tossed in whatever I had in the cupboards. Here goes:
Curried roasties:
potatoes, skin on, sliced into thick discs
sunflower or vegetable oil
garam masala
cumin
turmeric
chilli flakes
garlic powder
sea salt
crushed pepper
mixed green herbs
Preheat over to 200 deg. Put a baking dish with a little bit of oil in the oven to heat. Mix the herbs and spices with the rest of the oil in a dish, then add the potatoes and cover completely in the spice mixture. Add to smoking hot oil and roast for about half an hour, turning occasionally, until browned and crisp. Easy peasy!!!
Fish curry:
onions, diced
green pepper, diced
carrot, chopped
garlic, finely diced
chilli, finely diced
tin of chopped tomatoes
white fish (I use frozen, but whatever you like)
toot of water
sunflower/vegetable oil
garam masala
cumin
turmeric
Heat the oil in a saucepan and add the onions. Cook until soft, then add the garlic and chilli, then the spices. Cook out a bit, then add the tomatoes and water (as much as you like to get a good consistency, but don't over do it or you'll get a watery tomato dish). Bring to the boil, reduce to simmer then add the veggies (note: I used this veg but add whatever you like: chickpeas, spinach, courgettes - they all go!!). Then leave the curry simmering as long as you like - the flavour will continue to improve, just be careful it doesn't dry out. Ten minutes before serving time, add the fish - it will cook in no time at all and you certainly don't want it overcooked.
Just an afterthought, but prawns might be a nice addition to this curry. Not tried it yet though.
That's it chaps. A nice simple dinner - you can leave it to bubble and roast away while you're running around doing your other evening chores, and it comes relish!!! Enjoy!!!
